Allergy Free Banana Ice Cream Bites!

Ice cream is seriously my weakness, but then again, so is wine, and chocolate, and many other delicious goodies. But, back to ice cream. With Noah’s allergies, this is a topic that makes me incredibly sad. There is something so special about going out for ice cream during the summer, sitting outside, and just enjoying the whole experience. I mentioned a while back that even if Noah outgrows his dairy allergy, it crushes my soul that we won’t ever be able to enjoy going out for ice cream as a family because of the HIGH risk of cross contamination with nuts.  But, that’s life and we will make the most of it! Thankfully we have discovered So Delicious has amazinggg coconut based ice cream – it’s seriously so good. But, I’ve also been able to whip up these adorable allergy free banana ice cream bites, with chocolate chips. Not only are they adorable, but they are healthy, and delicious!

All it takes is 4 ripe bananas, Enjoy Life chocolate chips, and a splash of your favorite non-dairy milk. And a little bit of patience (and self-control) to wait while they freeze!

Start by slicing the bananas onto a baking sheet, lined with parchment paper or foil. NOTE: don’t make the same mistake I did and make sure your pan will fit in the freezer before you start! Whoops 🙂 Then, let the bananas freeze for an hour or so.

After they have had some time in the freezer, set them out for a few minutes to soften just a little. Place the frozen banana pieces in a blender/food processor, add a splash of non-dairy milk (we used our favorite hemp milk), and blend! Then stir in half a cup of chocolate chips!

Grease a mini-muffin pan with non-stick cooking spray, and fill each cavity with the banana “ice cream”. Drop a few more chocolate chips onto the top of each, and put back in the freezer for another hour!

Then pop the bad boys out with a knife, and enjoy!! I freeze mine in an air tight container, with parchment paper between the layers. Super easy, and delicious – it’s hard to eat just one…or two. But hey, they are healthy, right?!

  1. I’ve heard that frozen banana makes a good ice cream substitute but to see it made into something cute and appetizing like this is great.
    When we were kids we used to cut bananas in half, stick a lolly stick in them, freeze them, then dip in melted chocolate & refreeze. They were lovely and I have no idea why I never did them with my own children! Maybe it’s an idea you and your boy could enjoy too – I’m assuming these special chocolate chips you’ve used are melt-able ?
